ゆり根の生産はとても時間がかかります。収穫までに３年かかり、病気などにも弱く、一晩で全滅することもあります。 畑に植えつけられてから、花のつぼみを切るなどして地中の茎に栄養分をゆきわたらせることで、ぷっくりと太ることができ、美味しいゆりねがたんじょうしているのです。 また、畑を毎年のように植え替えなければならず、一度植えた畑には最低でも７年は空けなければなりません。
